
While we are half way through 2024 and seeing many weddings, there are specific trends that are standing out in the USA. In this blog I’m talking about flavor. There is definitely a shift in flavor choices this year than in previous years. Basic flavors such as white wedding, vanilla, chocolate and red velvet are not being seen so much in wedding cakes. I’m talking not only about my wedding cake business, but in the United States as a whole.
When you are visiting bakeries and scheduling your cake tasting, expect to see more bold and exciting flavors on the menu such as lavender, earl grey, chai, blueberry, lemon to name a few. You will also find more twists on the basic flavors to give them a revival, such as my Amaretto red velvet where I infuse Amaretto into the cake giving way to its almond notes.
Another trend in wedding cake flavors is the use of savory ingredients. Savory ingredients can add subtle hints to surprise the palette. Some examples are tea flavors such as Earl Grey, fresh herbs such as rosemary, sage and thyme and cheeses such as mascarpone and ricotta. Last year I made a lemon thyme cake and it was so tasty! The combination married so well together.
Caramel is a popular ingredient given its sweet nature. It can brighten up a subtle flavored cake with a surprise filling inside. Couples can be bold with caramel by adding chopped pretzels to give it a salty flavor, or chopped apples for a fall flavor. So many combinations for this versatile ingredient.

We are seeing more exotic and tropical fruits being used in cake flavors such as mango, passionfruit and coconut, kiwi, lime, prickly pear and papaya. These fruit flavors are fun because they are bold without being overpowering. Coconut and cherry are seen together as a great combination.
Let’s talk about coffee. Chocolate is taking on a new twist for wedding cakes with the infusion of coffee. Whether it be espresso or a milder coffee flavor, it takes chocolate cakes to a whole new level. The chocolate airs on the sugary side while the coffee remains savory and smooth which allows a sweet, bright fragrant tasting experience.
White chocolate is shining this year. Many couples do not think about this sweet and creamy take on chocolate. It pairs well with raspberry such as with my white chocolate raspberry truffle which is a French vanilla cake with raspberry filling and white chocolate buttercream. The tangy, sharp bite of raspberry compliments the creaminess of the white chocolate giving a delicious combination.

In reviewing all of the new flavor combinations that are going strong this year, we see many flavors are taking a global turn. American as apple pie and vanilla doesn’t cut it this year for wedding cake flavors. Couples want to taste new and exciting flavors that are worldly influenced.
Overall, it may be said from classic flavors to indulgent and bold, these flavor trends this year are sure to wake up your palette and taste buds. Staying ahead of these trends not only caters to diverse palates, but also infuses the celebration with a sense of modernity and a personal touch making the wedding cake a true centerpiece and long remembered.
